We have a very similar red/green pair at the moment, actually.
I think all peppers go from green to red over time? I heard one of the vendors at the farmer's market last week explaining to an woman that red bell peppers are just green ones that you didn't pick before they turned.
I guess I don't know if yellow is in the middle, or a different plant, or what.
